Love these cookies! So quick, so easy, so yummy!
You’ll only need three ingredients and the batter can be ready in under two minutes!
Once baked, Sprinkle Cookies can be served alone or topped with glaze or frosting and more sprinkles.
Have I mentioned that children will love these cookies?
Can’t get much simpler than this! A confetti cake mix (or add sprinkles to a regular white cake mix), vegetable oil and eggs.
Add everything to a mixing bowl and beat for a minute, or until it thickens slightly.
Drop the batter on a cookie sheet that’s lightly coated with cooking spray.
I used a small scoop that’s equal to one tablespoon. It’s a soft cookie and will flatten while baking, so you don’t want much bigger than that.
Let stand on the cookie sheet for a few minutes. Remove carefully. They may want to stick, but you can show ’em who’s boss.
They can be served just as they are.
They really don’t need piles of melt-in-your-mouth frosting. Really. Frosting is just not necessary.
But if you are frosting person, it sure is good!

- 1 Cake Mix (with sprinkles or add your own)
- 1/2 cup Vegetable Oil
- 2 Eggs
- Place ingredients in a mixing bowl. Beat for one minute, or until batter has thickened slightly.

- Bake at 350 degrees for 11-13 minutes or until the centers are set and the edges have browned slightly. Remove carefully. Enjoy!
