Whipped Buttercream

This is hands-down the best buttercream frosting I’ve ever tasted. The only frosting that comes close is from a bakery I once worked at in Pella, Iowa.

This frosting is light and fluffy with just the right  amount of sweetness. It contains a few unique ingredients that definitely separates it from the rest!

My cake-making mother-in-law found this recipe online and we tweaked it here and there. I will say, however, that it’s so light and airy that it doesn’t work as well for cake building. But for sheet cake, a small layer cake, cupcakes or some fancy sugar cookies, it’s dynamite!

Getting Started

We start with the base:

Soft Butter, Crisco & Salt

Mix on low for 5 minutes.

It’ll be nice and smooth and silky soft.

Secret Ingredient #1

Butter flavoring. Honestly, I’d never heard of such. I can’t help but wonder if that’s how they make buttered popcorn flavored jelly bellies? Not my cup of tea, but interesting!

Add just a smidge of this stuff, along with the vanilla extract (clear if you have it, but no biggie).

Beat until well mixed.

Secret Ingredient #2

Genius! Meringue powder. Add a little of this bad boy along with the powdered sugar. Just genius. It’s probably not that uncommon in the cake-baking world. But I’ve never been part of the cake-baking world. So it was new to me!

(Both of these ingredients can be found at any store that sells cake supplies. I believe these came from Michaels?)

You’ll add half of your powdered sugar with the meringue powder. Mix well. Then slowly mix in the rest of the powdered sugar, half a cup at a time. Check out the handle on that second picture. The frosting will be more yellow in color and a little stiff.Once all the powdered sugar is mixed in, let your mixer run on a low/medium speed for five minutes. Wallah! Light and fluffy!

Note, if you over-mix on too high of a speed, the frosting can develop air pockets. You want a buttercream that’s airy, not bubbly. Definitely learned that one the hard way. I way over-mixed once while frustrated with my food coloring abilities, or lack thereof. . .

Also notice how the color has turned to more of a white after the five minutes of mixing.

Now you are ready!

Add your color.


Pipe. Whatever blows your hair back!



Whipped Buttercream
  • 1 stick Butter, soft
  • 1 cup Crisco (7 oz)
  • 1/4 tsp Salt
  • 3/4 tsp Vanilla Extract
  • 1/2 tsp Butter Flavoring
  • 1/2 T Meringue Powder
  • 4 cups Powdered Sugar (1 lb)
  1. Mix butter, crisco and salt on low speed for 5 minutes.
  2. Add flavorings and beat until well blended.
  3. Add meringue powder and 2 cups powdered sugar. Mix slowly.
  4. Add remaining powdered sugar, half cup at a time until mixed well.
  5. Beat on med/low for 5 minutes, until light and fluffy.
